Wild boar

The hunting season has nearly come to an end. Nevertheless, the last outing during a recent cold spell proved very successful: 4 wild boar or "jabali". A good catch for the farmers/hunters in San Juan as the area is so widespread that many outings reap no return. Hence, the preference for hunting after a snowfall as the boar are more easily tracked.

Having recently seen and smelt (strong) two boar close up (kept as pets in La Miana on the way to Tella), I was surprised by the appearance of the ones in the picture; the farmers/hunters had certainly done a very clean job in removing the hair.

Traditionally, boar is served in a variety of ways, from the more popular stews to roasts, to air-cured hams and to fresh or air-dried sausages.
